Kool Ranch Granola

Makes about 3 1/2 cups

1/4 cup flax meal

1/2 cup boiling water

1/4 cup olive oil

1/2 tsp onion powder

1/2 tsp garlic powder

1 tsp dried chives

1 tsp dried dill

1/2 tsp pepper

1 tsp salt

1 T nutritional yeast

1 T sesame seeds

2 cups rolled oats

1 cup roughly chopped nuts (I used 1/2 cup each of toasted pistachios and almonds)

Preheat the oven to 350F and line a baking tray with parchment paper.

In a large bowl, combine the flax meal with the boiling water and whisk until the mixture thickens and slightly cools. Whisk in the olive oil, then add all remaining ingredients. Stir until well combined.

Spread onto the lined baking tray and press down with your hands to create a big sheet of granola.

Bake for 28-30 minutes, flipping half way through. When the granola is done, it should be dry to the touch and lightly golden brown. Let cool at least 10 minutes, then break into chunks. Store in an airtight container for up to 1 month.
