An incredibly easy dessert with refined flavors and high impact!

Ingredients

Matcha Dunking Syrup
  • 1 ¼ cups boiling water
  • ¼ cup sugar
  • 2 tablespoons matcha
Raspberry Ginger Coulis
  • 1 ½ cups raspberries (I did a combination of raspberry & tayberry, frozen is totally fine)
  • ¼ cup sugar
  • ½ a lemon zested & juiced
  • 1 inch piece of ginger, peeled and grated
  • ¼ teaspoon freshly cracked black pepper
Last but not least
  • 24 ladyfinger cookies
  • 2 - 9 oz containers coconut whipped topping, thawed
  • Extra matcha for garnishing
  • 7x11 baking dish

Instructions

  1. In a shallow dish, add the sugar and matcha powder then whisk to combine. Pour in half the water and whisk until the powder is incorporated. Add the rest of the water and continue whisking until the sugar is dissolved, set aside.
  2. To another bowl, add all of the coulis ingredients. Mix with a fork, smashing the fruit a bit to make a lumpy sauce.
  3. To assemble, dunk your lady fingers in the matcha syrup until they just start to get squishy. Place in the baking dish and repeat until there is a single layer of cookies. You might have to cut cookies to make them fit properly. No worries. This should use half of the cookies.
  4. Add one tub of the whipped topping and spread evenly over the cookies. Spoon the raspberry mixture over the cream, trying to make as even a layer as possible without smooshing the two together. You want layers of color.
  5. Add another layer of dunked cookies. If there is any left over matcha syrup, drizzle it over the cookies. Top with the second tub of whipped topping, cover with plastic and refrigerate at least 4 hours up to overnight.
  6. Before serving, remove the wrap and give a light dusting of matcha powder. Not too much otherwise it will be quite bitter! We’re just looking for a pretty garnish. Serve cold and enjoy!
