Ingredients

  • 8 ounces halloumi cheese, sliced into ½ in pieces

  • ⅓ cup mayo

  • 2 tablespoons harissa pasta

  • 3 tablespoons olive oil

  • ½ lemon, juiced

  • 2 cups cauliflower florets, broken into bite size pieces (approximately 1 small cauliflower)

  • 2 cups arugula

  • 1 sweet onion, thinly sliced

  • 1 loaf seedy whole grain bread, sliced

  • Butter

  • Olive oil

  • Salt

Instructions

Step 1

Preheat the oven to 500°F.

Toss the cauliflower with a drizzle of olive oil and salt. Roast for 5 minutes, stir, then roast another 5 minutes until fork tender and browned in spots.

Step 2

In a bowl, combine mayo, harissa paste, olive oil, and lemon juice. Mix until smooth.

Step 3

Heat a nonstick or cast iron skillet over medium-high heat and add olive oil.

Sear the halloumi on both sides until deeply golden brown and just softened in the center.

Step 4

Butter one side of each slice of bread and toast until golden.

Step 5

Assemble the sandwich with toasted bread, harissa mayo, arugula, sliced onion, seared halloumi, and roasted cauliflower.
