Ingredients
8 ounces halloumi cheese, sliced into ½ in pieces
⅓ cup mayo
2 tablespoons harissa pasta
3 tablespoons olive oil
½ lemon, juiced
2 cups cauliflower florets, broken into bite size pieces (approximately 1 small cauliflower)
2 cups arugula
1 sweet onion, thinly sliced
1 loaf seedy whole grain bread, sliced

Instructions
Step 1
Preheat the oven to 500°F.
Toss the cauliflower with a drizzle of olive oil and salt. Roast for 5 minutes, stir, then roast another 5 minutes until fork tender and browned in spots.

In a bowl, combine mayo, harissa paste, olive oil, and lemon juice. Mix until smooth.
Step 3
Heat a nonstick or cast iron skillet over medium-high heat and add olive oil.
Sear the halloumi on both sides until deeply golden brown and just softened in the center.

Butter one side of each slice of bread and toast until golden.

Assemble the sandwich with toasted bread, harissa mayo, arugula, sliced onion, seared halloumi, and roasted cauliflower.
