Ingredients

  • Half a yellow small diced

  • 2 stalks celery, small diced

  • 2 cloves garlic, roughly chopped

  • 1 bay leaf

  • 4 tablespoons unsalted vegan butter

  • 3 tablespoons all purpose flour (substitute gluten free flour)

  • 1 ¼ cups unsweetened plain oat milk

  • ¾ cup lager or pilsner style beer

  • ¼ cup nutritional yeast

  • 1 - 8 oz bag shredded vegan cheddar cheese

  • Salt & pepper

Instructions

Step 1

In a medium saucepan, add the vegan butter, onion, celery, garlic, and bay leaf.

Season with salt and pepper and sauté over medium-high heat until the vegetables are soft and translucent.

Step 2

Add the flour and stir well to coat.

Pour in the beer and oat milk. Stir frequently and bring to a simmer. Cook for 2–3 minutes until thickened.

Step 3

Remove the bay leaf. Add the shredded vegan cheese and nutritional yeast.

Use an immersion blender or transfer to a blender and blend until smooth.

Step 4

Return to the pot and adjust seasoning as needed.

Step 5

Serve warm in a crockpot on low heat or in a fondue pot.
